Last week my husband tasked me with making him a Paleo version of sticky date. This one is as rich and gooey as the real thing and dairy, gluten and refined sugar free! Enjoy with coconut ice cream for added indulgence...
2 cups of almond meal
2 cup of pitted dates, soaked in 2 cups of boiling water
1/4 cup maple syrup
1/4 cup of coconut oil
2 eggs, whisked
1 teaspoon of vanilla bean extract
1 teaspoon of baking powder
1 table spoon of coconut cream
Preheat the oven to 180. Blitz your soaked dates in a blender until smooth. Save half for the topping later and pour the other half into a bowl with the maple syrup, coconut oil, eggs and vanilla extract and whisk until smooth. Fold in almond meal and baking powder and mix until you have a smooth batter. Pour into greased baking moulds and bake for 20 or so minutes until the knife comes out clean. Let cool. Make the sauce with the leftover date mixture and coconut cream. Turn cakes out of moulds and pour sauce on top. Delish!
