Walnut, kale and quinoa salad

A tasty, protein rich salad great for lunchboxes

Ingredients
Serves 1
1 avocado
1/2 kale, massaged in sea salt, lemon juice and EVO
1 cup of chopped red cabbage, shredded
1/2 cup of yellow capsicum, chopped
100g of poached chicken breast, sliced
1 scallion, chopped
1/2 cherry tomatoes, chopped
Handful of walnuts, chopped
Mixed seeds (sesame, pumpkin, cumin)
Method
Assemble salad in bowl and top with seeds, lemon juice and EVO. Serve with humous
