Vegan burritos

Don't you love a burrito? My recipe uses black beans which are protein-rich and full of fibre. This is a great one for the whole family. Enjoy!


1 brown onion, diced 3 medium sweet potatoes, peeled and diced 1 cup black beans, cooked 1 cup avocado, mashed 2 cups of spinach 6 quinoa wraps


Sautée diced onion and sweet potatoes. Cover and let cook over medium-high heat for 5-7 minutes. Add the black beans. Stir, cover, and let cook for 10-15 minutes, or until the sweet potatoes are tender. Remove from heat and set aside. To assemble your wrap, spread with mashed avocado and spinach, then top with sweet potato mixture before folding up your burrito. Serve with lime wedges and sliced fresh chilli.
