2 sweet potatoes, peeled and grated
1 egg, whisked
Coconut oil for pan frying
Coconut yoghurt to serve
Green onions, chopped
Smoked salmon to serve
Place the grated sweet potato in a bowl with the whisked egg and seasoning and shape in thin cakes. Shallow fry in the coconut oil until cooked on each side. Serve with a blob of plain coconut yoghurt, chopped green onions, smoked salmon and cracked black pepper.
