Spiced veggie fritters

Calling all vegetarians! Try my spiced veggie fritters which are made with protein-rich chickpeas and will satisfy even the hungriest of appetites. Enjoy with a large coleslaw salad for a nutritious meal!


400g chickpeas, cooked 60g quinoa breadcrumbs 2 tablespoons tahini paste 1 large egg 1 teaspoon ground coriander 1 teaspoon ground cumin 1 carrot, grated 3 spring onions , chopped Coconut yoghurt, red cabbage and carrot slaw, to serve
