Spiced Pumpkin Parfait

Comfort by the Spoonful

Serves 6
Parfait:
1 lb. (450g) pumpkin puree
1.1 lbs. (500g) Greek yogurt
4 tbsp. mascarpone cheese
1 tbsp. vanilla extract
2 tbsp. brown sugar
2 tsp. ground cinnamon
¼ tsp. ground nutmeg
Toppings:
2 tbsp. honey
4 tbsp. dark chocolate chips
4 tbsp. chopped hazelnuts
Method:
Place the parfait ingredients into a large mixing bowl. Using a hand
held electric mixer, or a whisk, mix together until smooth.
Divide the parfait mixture into 6 serving glasses or jars. Cover and
refrigerate for 30 minutes or overnight.
When ready to serve, top each with a drizzle of honey, chocolate
chips and chopped hazelnuts.
