Who doesn't love mint choc chip ice cream? The rich creamy texture, fresh minty flavour, peppered with chocolate chips was always a favourite of mine as a kid. Sadly being lactose intolerant I hardly got to enjoy it until I created my own version which is dairy free, refined sugar free and simply delish! If you're following a Keto diet, simply replace the coconut sugar with xylitol.
Ingredients
I can of coconut cream
1/2 an avocado
1/2 teaspoon of vanilla extract
1/2 teaspoon of matcha powder
2-3 tablespoons of coconut sugar
50grams of dairy free chocolate chips
Method
Add coconut milk, avocado, matcha powder, peppermint extract, and coconut sugar to a blender until smooth. Stir in chocolate chips. Place into a sealable tub and freeze until set.
