Paleo gnocchi with mushrooms

Oh. My. God. This recipe is to die for. Super easy to make, this paleo friendly version is made with cauliflower and tossed in garlic infused mushrooms. My mouth is literally watering as I'm writing this! You can also toss in a fresh basil pesto or a creamy cashew sauce if you prefer.

Ingredients

4 cups of cauliflower, minced in the processor

1 cup of cassava flour

Himalayan sea salt to taste

1 punnet of button mushrooms, quartered

1 onion, diced

3 cloves of garlic, minced

Chopped parsley

Grated parmesan


Method

Steam cauliflower until soft, then wring out using a tea towel to remove excess fluid . Blend in a food processor with flour and salt to make a smooth dough. Dust the surface with more cassava flour and roll dough into tubes, then cut into one inch pieces.

Pop into boiling water then take out once risen to the surface. Drain and then fry off in some olive oil. Set aside in a seperate bowl. In the same pan add the onion and garlic and fry until softened. Add mushrooms and cook until they are soft and brown. Add gnocchi and sir through parmesan and chopped parsley.
