Low carb almond cookies

Who doesn't love the smell of cookies wafting through the house. This afternoon I'm making up a batch of almond cookies. Grain free, low carb and paleo-friendly, enjoy with a glass of almond or coconut milk.


Ingredients

1 and 1/2 cups of almond meal

1/4 cup of coconut oil

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon of baking soda

A pinch of salt

Flaked almonds and sesame seeds


Method

Preheat oven to 180 and line a baking tray with parchment paper. Mix the wet ingredient together then sift in the almond meal and baking soda and salt. Form a dough. Refrigerate for 30 mins then roll into small balls. Press down on parchment paper and top with flaked almonds and sesame seeds. Bake for 10 minute or until golden.
