Mmm waffles. I love mine hot and melt-in-the-mouth served with a side of poached eggs, mashed avo and crispy bacon. My recipe is keto and paleo friendly made with cauliflower and cheese making for a great protein-rich brunch.
Ingredients
1 medium-sized cauliflower
½ cup mozzarella, shredded
½ cup parmesan, shredded
2 eggs
½ tablespoon of almond meal
2 scallions, chopped
Salt and pepper to taste
Method
Pop all the ingredients in a blender and pulse until you have a smooth batter. Pop your batter into a greased and heated waffle maker. Cook until browned and serve with desired sides.
