This is one of my favourite dinners. It's low carb, tasty and melt in the mouth. Serve with a delicious salad and a classic pub dinner becomes a well balanced, nutritious meal.
Healthy chicken schnitzel
Serves 4
Prep 5 minutes
Cook time: 10 minutes
Ingredients
1 cup of almond meal
½ cup of Parmesan
Zest of 1 lemon
4 chicken fillets
1 egg beaten
A dash of almond milk
Method
Beat out chicken fillets with a rolling pin and baking paper until flat. Dip in egg and milk, then mix almond meal, parmesan and lemon zest and coat fillets evenly.
Fry in olive oil for five minutes each side.
Serve with a red cabbage and carrot slaw and leafy green salad.
