Gluten free Anzac biscuits

Try my gluten, dairy and refined sugar free Anzac day cookies, perfect for those wanting to enjoy a treat but are following a gluten free or Paleo diet.


2 cups of almond meal

2 cups of shredded coconut

1/2 of coconut oil, melted 1/2 cup of maple syrup

2 teaspoons of baking soda


Preheat oven to 180. Mix your dry ingredients in a bowl, then add the coconut oil and maple syrup, mix to form a dough, add a little water if it's dry. Roll into even balls then place on an oven tray lined with baking paper and flatten the biscuits. Bake until golden brown. Store in an airtight container once cooled.
