Fluffy Cottage Cheese Pancakes

Serves 4
Ingredients:
4 eggs
7 oz. (200g) cottage cheese
4 tbsp. milk
2 tbsp. honey + 2 tbsp. extra
for serving
1 tsp. vanilla extract
5.3 oz. (150g) all-purpose flour
1 tsp. baking powder
½ tsp. ground cinnamon
½ tsp. salt
2 tbsp. olive oil + 1 tbsp. for
cooking
fresh berries for serving
Method:
In a large bowl, whisk together the eggs, cottage cheese, milk,
honey and vanilla extract. Sift in flour, baking powder, cinnamon
and salt. Whisk until the flour is incorporated.
Now whisk in 2 tablespoons of the olive oil, and set the batter aside
to rest for 10 minutes.
When ready to cook, lightly grease a large skillet with olive oil and
place over a medium heat. When the skillet is hot, add the batter to
the pan, roughly ¼ cup per pancake. Cook the pancakes for 2-3
minutes on each side.
Serve the pancakes warm, topped with fresh berries and a drizzle
of honey.
