Cranberry, maple and apple crumble

Who doesn't love crumble? This is one of my favourites and perfectly healthy to boot

Ingredients

2 apples, peeled, cored and chopped

1 cup of dried cranberries

1/2 maple syrup


Crumble topping

1/2 cup raw almonds

1 cup almond meal

1/2 cup coconut oil

1/2 cup toasted coconut flakes

3 tablespoon coconut sugar

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon


Method

Cook the apples and cranberries in the maple syrup and enough water to cover. Gentle cook through on a medium heat. When cooked through place in an oven proof dish.


Mix the crumble topping together and top the apple. Cook in oven on a medium heat for 25-30 minutes until topping is golden.
