This gluten free, dairy free, paleo friendly almond and orange cake with figs and pistachios is one of my show-stopping favourites I like to make to impress family and friends. It's super easy to make and the combination of flavours is amazing!
Ingredients
2 boiled oranges, pips removed
2 cups of almond meal
1 cup of maple syrup
1 teaspoon of vanilla extract
6 eggs
Frosting
1 tub of coconut yoghurt
1 teaspoon vanilla extract
3 tablespoons of maple syrup
2-3 fresh figs, halved
Chopped pistachios
Fresh coconut flakes
Method
Preheat oven to 180c. In a blender pop the boiled and cooled oranges, almond meal, maple syrup, vanilla extract and egg yolks and blend until smooth. Whisk egg whites until stiff and fold into the cake mixture. Bake for about an hour or until knife comes out clean.
Once cake is cool, whisk the yoghurt with the vanilla extract and maple syrup until creamy. Frost cake and top with pistachios, coconut flakes and fresh fig halves.
