Grain free bread rolls

This is one of my husband's favourites. They're fluffy, light and delicious and perfect toasted with butter or with melted cheese or even as hamburger rolls. The best thing is they are gluten and grain free and super easy to make!

Grain free bread rolls

Serves two

Prep time: 5 minutes

Cook time: 45 minutes

Ingredients

1 cup of almond flour

3 tablespoons of psyllium husk

1 teaspoon of baking powder

1 teaspoon of Himalayan salt

1 tablespoon of apple cider vinegar

½ cup of boiling water

2 egg whites

Sesame and pumpkin seeds for topping

Method

Preheat oven to 175 degrees. Mix dry ingredients in a bowl, add apple cider vinegar boiling water and egg whites and beat with a mixer on medium until you have a play dough like consistency (will be a little more wet than traditional dough). Split into two rolls and place on a greased baking sheet. Top with seeds and cook until the outside is crisp and the bottom of the bun sounds hollow when you tap it.
